Lilliput: Killeen Goat Gouda

Killeen is a distinctive Irish goat gouda, handcrafted by Marion Roeleveld in Ballyshrule, Galway. Inspired by her Dutch dairy-farming roots and Ireland’s lush green pastures, Marion began making cheese in 2004 after moving to Ireland and discovering the exceptional quality of locally produced goat’s milk.

What makes Killeen particularly special is its traditional Gouda style made with goat’s milk. While Gouda is traditionally produced from cow’s milk, goat’s milk is more commonly associated with soft and fresh cheeses. Marion’s approach creates a unique goat gouda that combines the familiar character of Gouda with the distinctive qualities of goat’s milk.

Killeen goat gouda has a beautifully smooth texture with a gentle sweetness and delicate floral and nutty notes. Its balanced flavour makes it a wonderful addition to a cheeseboard or a delicious everyday cheese.
